Ghimeh stew recipe of Yazd chickpeas with delicious saffron
Ghimeh stew chickpea is one of the local and traditional Iranian dishes of Yazd province. Ghimeh stew peas with its pleasant taste and aroma can decorate your table along with other stews such as eggplant stuffed stew, carrot stew, sack stew, etc. Making Ghimeh peas is very easy and just like Ghimeh stew, except that chickpeas are used in its preparation.
ingredients :
- Chickpeas = 500 g
- Mutton = 600 g
- Onion = 2 pcs
- Omani lemon = 5 pieces
- Tomato paste = 2 or 3 tablespoons
- Oil = to the extent necessary
- Saffron = to the extent necessary
- Salt, pepper and turmeric = to the extent necessary
Instruction :
First you need to pre-soak the peas. To do this, pour the peas into a medium bowl 24 hours in advance And cover them with water and let them soak well. It’s better Change the pea juice several times during this time. If you wish, you can pour the peas into the drain after this time. Then peel them and then cut them in half. This is called double coagulation.
At this stage, wash the meat and cut it into cubes after drying.
Chop the onions into small pieces.
Make a few holes in each Omani lemon with a knife or fork. Then put them in a bowl with a good amount of water for 2 hours to soak.
Make hot onions:
Place a medium saucepan on a gas flame and allow some time for the saucepan to heat up. Pour some oil into the pot and after the oil is hot, chop the onions Pour in the oil and lightly fry the onions until light and clear.
Add meat and spices:
After frying the onion well, At this stage, first add the minced meat to the onion and cook until the broth is drawn And fry until lightly browned.
Then add the turmeric to the meat and onion and fry To get the taste and color of turmeric to eat meat.
Now place the meat and onion on the side of the pot. Then pour the tomato paste into the pot and fry until the dough is raw And it opens well and then mix the meat with it.
Add peas:
Now add the soaked and chilled peas to the pot Stir to mix with other ingredients. Then pour 5 cups of water into the pot and increase the gas flame until the water boils And after the water boils, turn down the gas flame And let the meat and peas cook well for about 2 hours.
Flavor Ghimeh peas:
After an hour and a half of cooking time, add Saffron mixed with hot water, Omani lemon, salt and pepper to Ghimeh peas. And let the stew fit.
Turn off the gas flame after the peas have settled. Ghimeh Put the peas in a suitable dish and garnish with French fries. And taste with plain rice or saffron rice.
