Tea bread or Qazvin tea bread is one of the best sweets for Nowruz. Although this dessert is originally known for supper and serving with tea, but due to its crisp and delicious and of course very easy preparation method, it can be a delicious and attractive option on Nowruz. Qazvini tea bread is one of the original Iranian sweets that can increase purity and intimacy in your home and bring everyone together.

ingredients :

  • Flour = 500 grams
  • Powdered sugar = 150 grams
  • Butter = 250 grams
  • Egg yolk = 2 pcs
  • Yogurt = 90 grams
  • Baking powder = 1/4 teaspoon
  • Cardamom powder = 1 teaspoon

For sweets napkins:

  • Egg yolk = 1 pc
  • Concentrated saffron brew = 1 teaspoon
  • Yogurt = 1 teaspoon
  • Sesame or pistachio powder = for decoration

Instruction :

Step 1: Sift the powdered sugar well first. Then put solid oil or butter at room temperature to melt a little. Pour the powdered sugar and oil into a fairly large bowl. Beat the oil and powdered sugar with an electric mixer for 4 minutes until the ingredients are thick and creamy. Use the lysine to collect material around the container.

Step 2: Break the eggs and add the egg yolks to the mixture of oil and powdered sugar. Then pour the cardamom into the bowl and mix the ingredients well for 1 to 2 minutes. When the ingredients are completely one-handed, turn off the electric mixer and set the bowl aside.

Step 3: Pour yogurt in another bowl and add baking powder. Stir the yogurt well until the baking powder is completely dissolved in it. Wait a few seconds for the yogurt to swell a little. Now add the yogurt mixture to the bowl containing the tea bread pastry. Mix the ingredients with an electric mixer until the yogurt mixes well with the rest of the ingredients.

Step 4: Add the flour to the pastry with the help of a sieve. Sift some flour first and stir a little with the help of an electric mixer. Then add the rest of the flour little by little and mix the rest of the flour with a spoon or a fork.

Step 5: Sprinkle flour on the work surface and place the dough on it. Knead the dough gently until it is completely one-handed. Continue kneading the dough until it forms and does not crumble when pressed. Be careful not to knead the dough too much, as this will cause the dough to fall into the oil and spoil the tea bread.

Step 6: Put the dough in the freezer bag or cover the bowl where the dough is. Leave the dough in a cool environment for half an hour to rest and make your tea bread sweeter.

Step 7: To prepare a Qazvini tea bread napkin, first take a small bowl and mix yogurt and egg yolk in it. To make the sweets more colorful, add brewed saffron to the mixture and stir well.

Step 8: In this step, you must turn on the oven to heat at 170 degrees Celsius. Place the dough on the table and flatten it with a rolling pin. The thickness of the dough should be about half to one centimeter. You can use a grooved jar or fork to make the sweets striped. Then cut the dough with the help of a variety of pastry cutters. Try not to move the dough too much so that it does not fall into the oil. If you find this difficult, separate the dough into smaller pieces and then cut with a cutter to make it easier to separate the pastry from the dough. Spread greaseproof paper on the oven tray and place the tea breads in it with the help of a spatula.

Step 9: Using a clean brush, rub all the sweets on the napkin. Then repeat for the second round to have better sweets. Sprinkle pistachio or sesame powder on all sweets.

Last step: Put the sweets in the oven for 20 to 25 minutes until light brown. Take the tea cakes out of the oven and after cooling, put them in a serving dish.

Important Notes:
– Keep these sweets at room temperature and in a closed container. If the air in your area is humid, it is better to keep the sweets in the refrigerator.
– You can use milk or breakfast cream instead of yogurt in Qazvini tea bread ingredients.
– In preparing this sweet, you should use hard and sweet yogurt. Watery and sour yogurt spoils the sweetness.
