Step 1: To make easy and quick homemade baklava, it is better to use ready-made dough (filo). Yufka dough is very thin and helps your baklava to have a crisp and light texture. Note that the dough purchased must be filo dough for baklava. Of course, you can also make baklava dough at home. It may be a little difficult to make homemade dough as thin as yufka dough. At this stage, take the yufka dough out of the freezer until ready to use.
Step 2: At this time, you can prepare the middle ingredients of baklava. To prepare the middle ingredients, choose the desired nut powder. You can use a combination of nuts such as walnuts, pistachios, almonds, hazelnuts, or if you wish one of these nuts but in the amount of 200 grams. Mix the nut powder with the powdered sugar, cardamom and cinnamon. Mix rose water with a little water, pour it on each layer of dough, put it in a sprinkler and set aside.
Step 3: Lightly grease the bottom of the mold with butter. Now place a layer of ready-made dough on the bottom. You can put 3 layers of dough on top for the baklava. This ensures that if the intermediate material is compressed, the material does not come out from under the baklava, and the texture of the baklava is completely integrated. Of course, you have to grease each layer of dough with butter after placing it well. After placing all three layers, cover the last layer with one of the mugs of your choice. Now spray the mixture of water and rose that you have prepared with a spray of water on the arranged nuts. Then put the rest of the nuts in a combined form and arrange. (For example, first arrange the almond kernels and after spraying, a mixture of pistachio and walnut kernels. Step 4: Now that you have filled the mold with the ingredients and greased the top dough well, make rhombus or square cuts on the dough with a knife (the cuts should be superficial). Then put the mold in the oven, which has already been heated. Preheat to 180 ° C for 20 minutes on low heat, then grill for 5 minutes on high flame only until your baklava is well cooked and golden.
Step 5: During cooking, you can prepare baklava syrup. To make baklava syrup or nectar, mix water and sugar in a bowl and put on heat. When the whole sugar has dissolved in the water and boiled a little, add the fresh lemon juice. Put on low heat and let it boil for 20 minutes until the syrup reaches the desired consistency. At the end of this time, add brewed rose and saffron to the syrup. After 2 minutes, turn it off and put it in the environment to cool the syrup.
Step 6: When the baking time is over and your baklava is ready, take it out of the oven and add the syrup in two steps. The first stage is when the baklava is slightly cooled and overheated. Pour half of the cooled syrup over the baklava and deepen the slices. Now cover the mold with a foil and leave it in the environment for 2 hours. Then open the foil and pour the rest of the syrup on the baklava. Your dessert is ready to serve again after 2 hours. Delicious and homemade baklava is ready. As we said, instead of using ready-made yufka dough, you can make your own homemade baklava dough. for this purpose; First, beat 1 egg yolk in a suitable container with an electric mixer. Then add 1/4 cup milk, 2 tablespoons yogurt and 1 tablespoon oil (butter) and stir until well combined. In a separate bowl, mix 1 and 1/4 cups of flour and 1/2 teaspoon of baking powder and sift three times to aerate the flour. Now gradually add the sifted mixture to the ingredients, stirring gently and in a circular motion. Then knead the ingredients by hand, and continue this process until you feel the dough no longer sticks to your hands. Then cover the dough, let it rest in the environment for 1 hour to work. After 1 hour, divide the dough into 5 or 6 chins. Sprinkle flour under the dough and on top of them, cover them again and let them rest for 10 minutes. Then sprinkle a little flour on the surface of the strainer, open each chin of dough on that surface and use it to prepare a delicious homemade baklava.
