Iranian Majestic Dishes with Saffron

Saffron-Infused Ajil Pilaf – Iranian Majestic Dish
Ingredients:
- 500 grams of rice
- 400 grams of boneless chicken
- 300 grams dried apricots
- 300 grams dried plums
- 200 grams almond slivers
- 200 grams pistachio slivers
- 300 grams barberries
- 2 medium onions
- 1 teaspoon ground saffron
- Butter (as needed)
- Salt and pepper (to taste)
Method:
First, soak the rice a few hours ahead of time. Then, in a large pot, bring water to a boil and add the rice with salt. Allow it to cook until partially tender. Afterward, drain the rice and set it aside. Meanwhile, clean the chicken, cut it into small pieces, and rinse the apricots, plums, and barberries. Soak the dried fruits in a bowl of water.
In a separate pan, add butter and a little oil, then sauté the saffron with the plums. Subsequently, slice one onion into thin strips and sauté it in another pan. Next, add the apricots to the sautéed onions and cook briefly. In a separate pan, sauté the barberries in butter. Once this is done, slice the second onion and cook it in a pan with saffron and a little oil. Afterward, add the chicken pieces, salt, and pepper, and fry until browned.
Once all the ingredients are prepared, drizzle some oil in a pot and cover the bottom with sliced potatoes. Then, layer the rice and mixed ingredients in the pot. Continue layering until all the ingredients are used up. Afterward, cover and steam the rice. Finally, while serving, sprinkle a few pieces of the fried chicken on top of the rice.
Saffron Infused Chelo Gosht – Iranian Majestic Dish
Ingredients:
- 1 sheep neck piece
- 2 onions
- 2 garlic cloves
- 2 tablespoons tomato paste
- 1 cinnamon stick
- 4 bay leaves
- 6 tablespoons saffron
- Turmeric (to taste)
- Salt and pepper (to taste)
Method:
Start by chopping the onions finely and sautéing them with some oil in a pot. Then, add turmeric and continue sautéing until fragrant. Subsequently, sprinkle 4 tablespoons of ground saffron over the meat and brush it to ensure an even coating. Afterward, add the seasoned meat to the pot with the onions and sauté until browned. Then, add the tomato paste and stir well. Pour in 8 cups of water, then bring to a boil. Once it starts boiling, reduce the heat and let the meat simmer for 3-4 hours until tender.
Once the meat is nearly cooked, add the garlic, cinnamon stick, and bay leaves during the final hour of cooking. About 30 minutes before finishing, add the remaining 2 tablespoons of ground saffron to enhance the flavor. When the water has reduced and the meat is fully cooked, remove the herbs from the pot. Finally, serve the saffron-flavored meat alongside saffron rice for a truly authentic meal.
