Recipe and cooking delicious meat borek with saffron
Borek is one of the most popular Turkish dishes. The main base of this dish is Yufka dough or Philo dough.
This popular dish is cooked in Turkey for all breakfast, lunch, dinner and snack meals.
The ingredients in the borek vary depending on the type of meal you want.
A popular Turkish breakfast can be a borek of cheese and vegetables, or meat and borek chicken in restaurants for lunch and dinner.

- Minced meat = 150 g
- Medium onion = 1 pc
- Mushrooms = 5 pcs
- Medium potatoes = 1 pc
- Bell pepper small = 1 pc
- Tomato paste = 2 tbsp
- Freshly chopped parsley = as needed
- Yufka dough = as needed
- Pizza cheese, gouda or mozzarella (optional) = as needed
- Egg yolk = 1 pc
- Egg whites = 1 pc
- Sweet yogurt = 1 tbsp
- Softened butter (or liquid oil) = 1 tbsp
- Saffron mixed with hot water = as needed
- Salt = as needed
- Pepper = as needed
- Thyme powder = as needed
- Turmeric = the amount needed
Instruction :
First, chop the onion finely. If you want to add garlic, grate or chop the garlic. Put a little oil on the heat in a pan.
Now pour the onions into the pan And fry a little. Then add the garlic.
After the onion and garlic mixture is slightly browned, add the minced meat.
Stir to coat the onions and garlic and add the raw meat, then add the turmeric and a little pepper. Now put it in the pan to cook the meat well and completely. (Stir it every few minutes)
Cook the potatoes steamed or boiled. After it is cooked and cooled, chop it into small cubes.
Finely chop the mushrooms and fry in a separate pan in a little oil until crisp and mushroom juice is obtained.
You can add a few drops of lemon juice to the mushrooms so that the color does not turn black. Chop the bell peppers into small pieces.
When the meat is completely cooked, pour the potatoes, mushrooms and bell peppers into the pan and mix.
Add salt, pepper and thyme. Roast until well combined. Add the tomato paste at the last minute.
Then fry and fry until the meat ingredients are flavored with the paste and taste, and the raw color of the tomato disappears and it is slightly fried. Finally, add the freshly chopped parsley to the ingredients and fry for 2 minutes. Then turn off the heat.
In a bowl, mix the egg whites, yogurt, butter or oil.
Prepare the ready-made Yufka dough that you took out of the freezer before. Place a sheet of dough on a flat surface.
Brush the surface of the dough with a cooking brush dipped in a mixture of egg whites, yogurt and butter until soft and crumbly.
Put another sheet of dough on it so that the borek is resistant and the material does not come out of it. Spread the egg white mixture on the second layer as well.
Now place the required amount of well-chilled meat in the middle of the dough. If you want, put your desired cheese on the meat ingredients.
Now fold the corners of the dough inwards so that the material does not come out and then roll it up and wrap it. In the last part, you can add a little white mixture so that it becomes sticky and the borek roll does not open.
In a bowl, mix the beaten egg yolks and saffron. Brush the surface of the prepared borek with a brush dipped in a mixture of egg yolk and saffron.
Sprinkle a little sesame on each roll of borek if desired.
To prepare the meat borek in the oven, place greaseproof paper on the bottom of the oven tray and place the prepared borek at a distance.
Place the tray in the preheated oven at 180. C for 30 minutes to cook.
You can set the last 5 minutes to grill until golden and colorful on the boreks.
