recipe for cooking khagineh with nuts with Iranian saffron
Tabriz khagineh with nuts is a very delicious dessert that is prepared more than other times during Ramadan. But it also has its fans all year round. It is very tonic, chic and very easy. This amazing dessert is known as the Khagineh of Majlisi Tabrizi, but it is prepared in most cities of Iran.
ingredients :
- For syrup:
- Sugar = 1 cup
- Water = 1 cup
- Cardamom = 1 pcs
- Saffron mixed with hot water = as needed
For the floor:
- Eggs = 4 pcs
- White flour = 6 tablespoons
- Yogurt = 6 tablespoons
- Baking powder = 1 tablespoon
- Liquid oil = 1 tablespoon
- Vanilla essential oil = as needed
For intermediate materials:
- Chopped walnuts = 1/2 cup
- Chopped pistachios = 1/2 cup
- Cinnamon powder = 1 tablespoon
- Cardamom powder = 1 teaspoon
Instruction :
Step 1: Prepare the syrup
1- To prepare syrup or nectar, first put a pot or boiling milk on the heat. Add a pinch of water and a pinch of sugar. Mix well until smooth.
2- Add brewed saffron and let your nectar boil until it is relatively thick. Then remove from the heat and set aside to cool slowly.
The second step is to prepare the dough without oven
1- Take a medium bowl. Break the eggs in it. Mix well with a mixer to obtain a cream-colored liquid. Now add yogurt to it and mix well.
2. Sift the flour and baking powder into another bowl. Then add to the egg and yogurt mixture. Stir well so that no flour pellets remain. Now pour the vanilla essential oil in a bowl and stir.
3- At this stage of preparing Tabrizi khagneh with Tabrizi, you should put a non-stick pot or pan with appropriate dimensions on the heat. Lubricate it with liquid oil. Now pour half of the dough in the pan to cook one side. The lid of the pan must be closed to hold its own ingredients.
4- Remove the lid of the pan and check that it is undercooked. Now pour the intermediate ingredients that you have already prepared and mixed on it.
5- Pour the other half of the dough in the pan. Let it cook a little. Then carefully and with the help of a spatula, turn the dough so that the other side is cooked and golden.
6- Now turn off the flame. Pour the prepared syrup on the hot dough to absorb. Put the Tabrizi khagineh in a serving dish and decorate as desired.
Important Notes:
– In preparing the syrup, you can also use one-half cup of rose water.
– If you feel the sweetness of the syrup is a little too much for your taste, you can halve the amount of raw materials of the syrup.
– To make the cake cake more colorful, you can brew some saffron and combine it with eggs and yogurt.
– In this recipe, ordinary sweet yogurt was used. But instead of regular yogurt, you can substitute four tablespoons of skimmed or high-fat yogurt.
– To prepare molded dough, you must combine liquid oil with ingredients. Then pour half of it in a greased pan. Place the mold in the oven at 180 ° C to simmer in a few minutes. Then, as in the recipe, add the middle ingredients and the rest of the sauce. About a quarter is enough to cook it.
– Be sure to add the syrup cold and in several steps to absorb the dough well.
– This amount of raw materials is enough to prepare cake cake without oven in a 25 cm pan. If you use a smaller pan, halve the amount of ingredients.
– To prepare the dough with milk, you should reduce the amount of yogurt to 2 tablespoons and add a half cup of milk to it.
