ingredients :

  • Mutton with bones and fat = 1 kg
  • Quince fruit = 2 pcs fresh and yellow
  • Butter = 100 grams
  • Bukhara plum = 100 g
  • Large onion = 3 pcs
  • Finely chopped potatoes = 6 to 8 pcs
  • Medium carrots = 3 pcs
  • Large tomatoes = 2 pcs
  • saffron mixed with hot water = 2 tbsp
  • Tomato paste = a tablespoon if desired
  • Salt and pepper = enough

Instruction :

Chop the meat with the bones and fat into large pieces.

Cut the onions into rings.

Choose a suitable frying pan and pour a small amount of oil in it, until the frying pan becomes greasy.

Then completely cover the bottom of the frying pan with the onion ring and put some pieces of meat on the onions. Cover the next layer again with the onion and then the meat.

Pour a glass of water and some saffron into the pot and put the pan on a gentle heat until the water boils. After boiling the ingredients, reduce the heat so that the meat cooks slowly.

In the meantime, chop the tomatoes and carrots. Peel a squash, grate it and slice it.

After the meat is half cooked, put a layer of Quince on it and pour a little saffron on the Quince rings and add the right potatoes along with tomatoes, Bukhara plums and chopped carrots to the pan.
Finally, put onion rings on all ingredients and sprinkle some salt and pepper on them.
