One of the traditional sweets of Qazvin is wheel sweets. Of course, since Charkhi pastry is very famous and is made in most cities of Iran, this sweet was also attributed to other cities in Iran such as Mashhad. Wheel sweets have a light texture, great taste and the best choice for Nowruz sweets. ingredients :

  • Flour = 125 grams
  • Rice flour (sifted silk) = 125 grams
  • Solid oil = 95 g
  • Powdered sugar = 90 grams
  • Yogurt = 38 grams
  • Egg yolk = 2 pcs
  • Baking powder = 1/4 teaspoon
  • Rose water = 1 tablespoon
  • saffron mixed with hot water = as needed
  • Cardamom = 1/4 tablespoon

Instruction :

1- First, mix the powdered sugar (powdered sugar) and oil with a mixer for about 5 minutes until it becomes fluffy and light and its color changes to a cream color.
2- Add egg yolks, saffron, cardamom and rose to the ingredients and stir for about 1 minute until completely mixed.
3- Mix yogurt and baking powder in a separate bowl and let it rest for a few minutes. Then add them to the pastry and stir a little.

4- Mix the flours together and sift. Finally, add them to the ingredients and mix the ingredients with a spoon or your fingers to get a dough.
5. Cover the dough or put it in a bag, leave it at room temperature (preferably cool) for 6 hours and let it rest.
6- If you have wheels and tubes, pass the dough through it. Pour the dough into the meat grinder, put a board at the exit, after leaving the dough, divide it into suitable pieces using a knife.
7- Grease the oven tray and put greaseproof paper inside it. Put the doughs in it at a distance from each other, sprinkle portulaca seeds on half of them and put them in the oven, which has already been preheated to 170 degrees, for 15 minutes.

8- After 15 minutes, take the sweets out of the oven. After they have cooled completely, sprinkle pistachio powder on the other half of them and enjoy.

Important Notes:
– Use quality oil. Improper oil spoils the sweetness. You can also use pure confectionery oil instead of solid oil.
– You can use an electric meat grinder or a manual meat grinder to grind the dough. If you do not have a meat grinder, you can use the desired mold or funnel and pipette. To mold the dough, open it between two sheets of greaseproof paper using a rolling pin and mold using a cutting cutter.
– If some of the dough pieces do not turn out the way you want, put them back in the meat grinder and grind again.
– You can use portulaca oleracea, pistachio powder and coconut powder to decorate the pastry.
– Rest the dough to grind rice flour. But do not rest it for more than 6 hours. Because the baking powder in it spoils the dough.
– Add cardamom to the ingredients of the desired pastry. If you do not want the color of your pastry to be dull, you can remove cardamom from its ingredients.
– Do not knead the dough too much because it will fall into the oil and harden.
– Be sure to preheat the oven for 15 minutes before placing the sweets in the oven.
– Be sure to pass the rice flour and powdered sugar through the silk, and the flour through a sieve to soften and have a softer sweetness.
– After adding yogurt to the ingredients, do not stir it too much so that the yogurt does not melt.
– They also make wheel sweets in the form of cocoa. Just add a little cocoa powder to the ingredients.
– In many recipes, if saffron is added, cardamom and rose are removed.
– The shelf life of wheel sweets is long and it is the best option for your Eid sweets.
